What does 'Natural' mean? And how does 'Washed' taste.
These terms get thrown around a lot in the industry, often without much understanding of what they mean. This is totally understandable, it is hard to really experience how the whole processing system works by reading vague blogs or old books. For me, I found this particularly frustrating in the early days of my career.

I hope it helps you understand why coffee needs to be processed, how the different methods can impact flavour and some of the reasons why one method might suit a particular country.
