Ethiopia is the birthplace of arabica coffee.
The Ethiopian farmers have developed processing methods over countless generations and have some of the most incredible examples of natural or ‘dry’ processing in the world.
This means the coffee cherry has been left to dry with the coffee beans still inside, much like raisins. Done correctly it enhances the sweetness and intensity of flavour. It’s a risky endeavor however, if it goes wrong you can get some fermented flavours and sourness. This is an outstanding example though, compare it to it’s washed neighbor the Worka to see how incredible processing methods can be.
