We caught up with Head Chef Sam at Commonfolk Mornington to see exactly what makes him tick 😉

What gets you most excited about cooking and leading our kitchen team at Commonfolk Mornington?

I’d have to say it’s a mix of the incredibly passionate staff and the ability to experiment and with some great produce for our customers to dig into.


Tell us about your favourite locally grown ingredient to feature this season.

We’ve got some great brassicas that’ve been coming through at the moment but I’m excited for our backyard house grown peas to really start kicking off 🥦🥦


What are you most passionate about?

Backyard to bowl, I love growing my own veggies and sharing them with through dinner with friends and family. I always plant new varieties of seeds that I’ve never tried before, it can be challenging but allows me to be more creative and is 100% worth it.

Any new crazy things growing in our Commonfolk backyard that we can keep an eye out for?

Plenty as always, 😉 we’ve just turned our soils in preparation for the new season where we’ll see an array of different peas and beans.

Tell us what your focus is in our new upcoming menu

We are going to be putting our spin on what people know and love using the local produce we have in season or growing in our backyard 🥕🥦🍅🌽

Sam you love a beer, what's your go to brew choice with what signature Commonfolk dish?

Oooh probably the Jetty Rd blueberry sour and a Cuban sandwich! Bloody great combo! 🍺🥪

You can catch Sam in the kitchen at Commonfolk Morno, tending to the veggie beds out the back or sinking a couple of blueberry sours in the courtyard on a sunny afternoon 🤟
