Los Milagros was established as a partnership coffee after many years of purchasing from our friends at Caravela. It was made official after a trip in early 2023 to meet the producers and team on the ground. Flying into the Sierra Madre de Chiapas is incredible, so many snow capped mountains that it appears like the ocean on a windy day. Driving through the mountains is just as breathtaking, stopping for a quick breakfast at the freezing cold elevation of 2840 MASL before descending into more temperate and appropriate conditions for coffee growing in the Siltepec region at 1800 MASL. The Caravela field team works with producers on best processing practices throughout the harvest, making adjustments as conditions change to best maintain quality and consistency. Majority of the coffee is a washed process where producers pulp their own coffee, let it sit in mucilage for 20-30 hours before soaking for another 24-48 hours and finally leave to dry on patios until reaching the desired moisture level. Many small holders contribute to the dry mill in Motozintla where coffee is cupped and scored, each producer is paid a quality bonus based on how their coffee performs and given lots of information to learn about how to continuously improve their coffee each year. The quintessential lemon curd is back for another year, with a sweet mandarin and date finish.
