The Quest for Sleep Continues… All the way back in 2017 we visited Mausi Hayn and her partner Eddy at their farmstead - Selva Negra. If you’ve seen the picture of Badger looking goofy on a donkey, that’s the farm. Their approach to sustainability blew us away then and they keep it up now. As a certified organic, animal rearing, dairy producing, home baked produce, self powered, eco lodge and restaurant Mausi and Eddy are clearly our people. Since then, they’ve moved onto hydro-power for their electricity, and a methane plant fueling the heating and kitchens. The entire estate produces less CO2 than an average American household. They also have a program to support indigenous culture and history. With all that being said, they produce some pretty great coffee too, so when the next harvest of this mountain water, Tarantinofied, coffee became available we had to jump on board again. This coffee is soaked in the water from Pico de Orizaba, the highest mountain in Mexico, to slice its caffeine content to 0.1%, using La Hammonia’s finest hand picked green coffee of mixed varietals that may not make it into other lots. What this coffee lacks in caffeine, it makes up for in flavour with a punchy fig tart start, sweet and sticky chai flavours and skosh of choccy in the finish. We’re working with our mates at First Crop coffee to help import this organic and ethically sourced number.
