High in the misty hills of Chenalhó in Chiapas, smallholder producers continue to grow coffees that carry a strong sense of place. Bourbon, Typica and Caturra thrive in these cool mountain valleys, tended by families who have farmed here for generations. This lot comes to us through our long standing work with Ben Whitaker, who has spent years building relationships in these remote communities. Ben’s approach has always been grounded in trust and patience. Through a connection with friend and partner, Antonio Jimenez, he has helped create stable pathways for producers to earn more for their coffee, while protecting the traditional varieties and washed processing they take pride in. The producers behind this lot each farm only a few hectares, relying on careful hand picking, small scale fermentation and slow washing to bring clarity and balance to the cup. The cooperative, Tatik San Idelfonso support, helps ensure their work reaches roasters who value that kind of detail and care. In the cup you will find raspberry brightness right from the start, a smooth caramel sweetness through the middle and a clean preserved lemon finish that brings everything into focus. It is classic Chiapas with a little extra lift, shaped by people who know their land and their craft deeply. Doing coffee the hard way is rarely the quickest or easiest path, but it is almost always the most rewarding. Every careful pick, every small fermentation batch and every washed lot adds up to a cup that feels honest and considered.
