A Colombian from Colombia.

A Colombian coffee from Colombia, not a typo, in fact Colombia is a coffee varietal. With roots of Cattura and Timor, Variedad Colombia was developed in the 1980’s as an alternative that was resistant to coffee leaf rust. It was distributed nationally and can be found in most coffee farms across Colombia. Decades on it is not so coveted anymore and often replaced with Bourbon or Catuai, but some producers like the Campos Roa family have the special touch and can extract the best out of it. The first fermentation of whole cherry in grainpro plastic bags starts the sugars breaking down before being pulped for the second washed fermentation. Dual fermentation is a marriage of natural and washed techniques. Tasting notes of sweet yellow nectarine, delicate black tea and lemon thyme florals. A beautiful Colombian, Colombian produced by a Colombian barista champion.
