Sometimes we get coffee samples from our importer friends—they might get tasted straight away, or occasionally forgotten about for a few days, or even weeks. When Ethiopian samples arrive, however, they’re tasted instantly for fear of missing out. Will and Tommy tasted this one as soon as humanly possible, but unfortunately, still missed out. They told Jordy at Osito, "If for some reason the person who has this coffee contracted pulls out, we’re in." Surely not though—this coffee is incredible. Such a wild and intense anaerobic fermentation that is still clean and balanced would be snapped up and never seen again. Well, some lunatic out there gave it up, and that means we get to share it with you.
Introducing Sookoo Wine—a dazzling exploration of fermentation from the heart of Odo Shakiso, Ethiopia. Born out of a long-standing collaboration with Sookoo Coffee’s visionary founder, Ture Waji, this coffee pushes boundaries with its innovative anaerobic fermentation. By fermenting cherries in a sealed, oxygen-free environment, natural sugars transform into vivid, fruit-driven flavours, resulting in a deep, wine-like complexity.
Sookoo Wine bursts to life with a playful effervescence—think sweet creaming soda that lingers on the palate. Zesty lime splice cuts through the sweetness, offering a refreshing balance, while freeze-dried strawberries bring a delightful fizz that tingles on the finish. The clean, yet wild fermentation leaves each sip lively and layered, making it a thrilling experience from start to finish.
How this coffee slipped through the cracks, we’ll never know. What matters is that it’s here now, and you get to enjoy every last wild, fruit-packed sip.
